Valentines’ Day? In a firehouse?

I have to say, as I recall, nothing was celebrated among my fellow firefighters for Valentine’s Day. A day for lovers not firefighters but certainly we had our share of admirers!  The day usually was a normal one, if there is such a thing in New York City, so meals were prepared.

Although for this special day, to me, there is nothing more caring or special you can do for someone you love, than prepare them their favorite meal.  So, share and prepare this simple, easy to make dish for someone you love or someone special who could use the caring gesture of a well cooked meal! Fillets of Sole | Recipes | Chef Joe Bonanno

Fillet of Sole El Lupo

1 tablespoon olive oil
1 medium onion, chopped fine
1 cup crushed tomatoes
3/4 cup dry Marsala wine
1/2 cup bottled clam juice
3 tablespoons finely chopped fresh Italian parsley
1/8 teaspoon fresh ground black pepper
4  6-ounce flounder or sole fillets

In a large non-stick skillet, heat the oil over medium heat. Add the onion and cook for about 7 minutes, until just golden.  Stir in the tomatoes, Marsala wine, clam juice, parsley and pepper and bring to simmer.  Roll up the fillets to form thick cylinders. Place fillets seam side down in the sauce.  Cover and simmer for about 10 minutes until the thickest part of the fish is opaque when flaked with the tip of knife.  With a slotted spatula transfer the fillets to 4 dinner plates and spoon sauce over fish.
